The Cahuilla Tradition of Harvesting and Roasting Yucca

“If you see steam coming out, it’s still cooking,” says John R. Preckwinkle III. “If you don’t see any steam, then it’s ready.” Preckwinkle, a former Tribal Council member and lead bird singer for the Agua Caliente Band of Cahuilla Indians, is talking about yucca, the strange, spiky plant that grows across many of the mountain slopes surrounding the Coachella Valley.
